How To Pick A Pizza Oven

Photo: The Ooni Karu pizza oven series is an example of quality design and manufacturing.

When it comes to selecting the best pizza oven, quality of design should obviously remain top of mind. This includes basic factors such as how well the pizza oven retains heat, what kind of materials are used to make it, and if the company that makes it is reputable.

Price is also a factor, and if the deal is right I may be willing to concede a perk here or there—that is, if it has other features that I value as well. Some of the features I like to see are good ventilation, adequate size, efficiency, and choice of fuel.

The rest comes down to personal preference—what kind of pizza do you like? If you like New York style pizza, you’ll need a large oven with the ability to maintain a low, steady heat. On the other hand, if you like Neapolitan best, you’ll probably want a 12 inch wood-fired oven.

Size Matters

A Neapolitan style "pizza marinara" with slices of garlic and fresh basil.
Photo: The pizza pictured here has smaller slices typical of Neapolitan style pizza.

Perhaps the most fundamental question you need to ask yourself before picking out a pizza oven is what size pizza you plan on making. If you want to make large pizza, you’ll need a large oven. And if you want to make large and small pizzas (like most people), you’ll still need a large pizza oven.

However, if you’re on a budget and only plan on making pizza for yourself, or perhaps one other person, you can save a lot of money buying a smaller 12 inch pizza oven. 12 inches is approximately the size of a standard Neapolitan pizza, which should be more than enough for a single person.

Most pizza ovens come in either 12 inch or 16 inch models, but this doesn’t always tell the whole story. For example, if a pizza oven advertises itself as being 12 inches but only has a 12 inch pizza stone, that means realistically the biggest pizza you can make in it will only be 10-11 inches. This is because pizza dough contracts when it cooks, which is why pizza dough is usually stretched beyond 12 inches before cooking so it shrinks down to the proper size.

For this reason, I like to see a pizza oven with a larger baking surface than the largest advertised pizza size.

What Pizza Style Do You Like?

Photo: A NYC slice (left) and a Neapolitan pizza (right) require very different cooking environments.

You can cook any style of pizza in any pizza oven, but some ovens are better at certain styles than others. For example, New York style pizza is cooked at a relatively low temperature for several minutes, while wood fired (or Neapolitan) pizza is cooked at the maximum temperature for only 1 or 2 minutes.

Likewise, a propane oven gives greater control over the temperature with the simple turn of a dial, while a wood-fired pizza oven is great for big bursts of intense heat but not as easy to keep at a low steady flame.

Of course, most people want to make multiple styles of pizza in their oven. So if you can afford it, I recommend looking for a multi-fuel pizza oven which will allow you to switch between fuel types depending on your mood.

Which Are The Best Outdoor Pizza Ovens On Sale?

Note: While this list is continually updated, some pizza ovens may no longer be on sale. Check back soon for more great deals.

Bertello Pizza Oven

Photo: The Bertello pizza oven has everything you need to get started.

What it is: The Bertello 12 inch is an outdoor multi-fuel pizza oven that can burn wood and propane right out of the box. This pizza oven was featured on Shark Tank and actually got funding from Kevin O’Leary himself.

What I like: I recently reviewed this pizza oven and while I liked it overall, I felt it wasn’t as good of a value as an Ooni oven at full price. That said, if you can get it on sale, it’s a very good deal as long as you understand what you’re getting. I love that this package includes both the wood and gas burners (which usually come separately) as well as an ever-essential pizza peel.

Downsides: The Bertello’s wood burner is fairly rudimentary and isn’t as easy to refuel as a wood pellet burner found on some other pizza ovens. I also don’t like the fact that it doesn’t have a chimney, impeding airflow and making it difficult for smoke to escape without getting in the eyes and mouth of whoever is cooking.

Bottom Line: The Bertello 12 inch is great with propane but poor with wood due to some airflow issues and lack of a chimney. As a bundle, it’s a great deal since it includes all the necessary accessories.

Ooni Fyra 12

Photo: The Ooni Fyra 12’s gravity-fed pellet hopper is what sets this pizza oven apart.

What it is: The Ooni Fyra 12 is a 12 inch wood-pellet pizza oven with a unique gravity fed pellet hopper. This pizza oven is easily one of the best wood-fired Neapolitan pizza ovens on the market today.

What I like: If you’ve read some of my previous writings on Ooni pizza ovens, you’ll know that the Ooni Fyra 12 is (in my opinion) the best 12 inch wood-fired pizza oven available today. This pizza oven has excellent air flow, a highly efficient burner, and a super easy to use gravity fed pellet hopper. Just pour a few scoops of pellets into the hopper and gravity will draw them down as needed—it doesn’t get any better.

Downsides: Aside from me wishing this had a 16 inch counterpart, there isn’t much wrong with this pizza oven. The Ooni Fyra 12 is worth every penny as long as you’re OK with only using wood-pellets.

Bottom Line: The Ooni Fyra 12 is a near perfect wood-fired pizza oven, so if you can get it on sale don’t hesitate to grab one. In my opinion, this is the best valued pizza oven available on Amazon today.

Ooni Koda 12 Pizza Oven

Photo: The Ooni Koda 12 is one of the best propane pizza ovens on the market.

What it is: The Ooni Koda 12 is a 12 inch pizza oven that uses propane only. Tihs pizza oven is made by Ooni, one of the best and most respected consumer pizza oven brands on the market.

What I like: The Ooni Koda 12 is well built, highly portable, and offers the simplicity of propane gas. This pizza oven is perfect for taking with you on camping trips or a friends house, and can even use the same fuel tank as a regular barbeque grill. The carbon coated carbon steel exterior makes this pizza oven amazing at retaining heat and keeps the outside surface relatively cool to the touch while in use.

Downsides: The Ooni Koda 12 is a great oven, but at only 12 inches, you’re limited to small pizzas only. It also only supports propane, which is fine in most cases, but if you ever want a smoky wood-fired taste, you’ll have to use a different pizza oven.

Bottom Line: If all you want is a lightweight, easy to use, affordable pizza oven to make pizza at home, look no further than the Ooni Koda 12. Ooni pizza ovens are among the best available today, and they don’t go on sale often, so grab one while you can.

Note: For more information on Ooni pizza ovens, read my full comparative review of each Ooni oven here.

Gozney Roccbox Pizza Oven

Photo: The Gozney Roccbox is an amazingly well-insulated pizza oven.

What it is: The Roccbox is a 12 inch multi-fuel pizza oven made by Gozney. This pizza oven is one of the most popular out there—probably second only to Ooni. The Roccbox is capable of burning propane right out of the box, as well as wood with an optional wood burning attachment.

What I like: The Gozney Roccbox is one of the best insulated pizza ovens on the market today, which means it retains heat very well and doesn’t need to be reheated between each pizza. As a propane pizza oven, the Roccbox is one of my top choices with its excellent burner and built-in thermostat.

Downsides: Despite the new and improved “wood burner 2.0” (which works great), I don’t recommend using the Roccbox as a wood-fired pizza oven due to its lack of a chimney. Without a chimney, air flow is poor and smoke has nowhere to go but to waft out the front and into the faces of those nearby. That said, if you stick with using propane most of the time, the Roccbox is a great pizza oven.

Bottom Line: The Roccbox is a multi-fuel 12 inch pizza oven that’s great with propane and not so great with burning wood, mostly due to not having a chimney. If you can get it on sale, I recommend picking one up and sticking with the propane option. The Roccbox’s amazing insulation makes this oven perfect for making lots of pizza, one after the other, without losing much heat in the process.

Big Horn Pizza Oven

What it is: The Big Horn pizza oven is a 12 inch wood-fired pizza oven that uses wood pellets right out of the box. This pizza oven has gained a reputation online as being an “Ooni clone” for a much lower price, especially as compared to the more expensive Ooni Fyra 12 oven.

What I like: While I disagree with the Big Horn being billed as an “Ooni clone” (it isn’t nearly as well constructed or designed), it does have some features that get my attention—especially for its low price. I like the fact that the Big Horn has a chimney (something most inexpensive pizza ovens don’t have) as well as an efficient wood-pellet burner. Don’t expect it to be just like the Ooni Fyra 12 (one of the best wood-fired pizza ovens on the market), but for its price, the Big Horn pizza oven is a good pick if you understand its limitations.

Downsides: The Big Horn pizza oven works well enough, but it’s cheaply constructed and doesn’t retain heat very well, meaning it will need to be reheated between each pizza. The outside surface of the Big Horn gets extremely hot to the touch as well, so be careful with it around children and animals.

Bottom Line: If you’re on a strict budget and want to start experimenting with a high temperature pizza oven, the Big Horn will do the trick. That said, the Ooni Fyra 12 is a superior pizza ovenOpens in a new tab. priced only a bit higher at $349. So, you might want to consider that one instead if you can afford it.

Food Party Pizza Oven

Photo: The Food Party pizza oven emulates the look of the Ooni Koda series.

What is it: The Food Party is a 12 inch propane pizza oven obviously made in the spirit of the Ooni Koda 12. With its sleek design and slightly lower price, this pizza oven will appeal to those attracted to the Ooni oven but wanting a slightly lower price.

What I like: The Food Party 12 inch is lightweight with simple propane temperature controls, making it great for taking on trips or to a relative’s house. I also like the fact that this oven comes with an infrared thermometer and a pizza peel to get you started. Compared to the Ooni Koda 12 at $399, the Food Party pizza oven is over $100 cheaper (sale price).

Downsides: Like most budget pizza oven models, the Food Party pizza oven is not built using top-notch materials and isn’t quite as expertly designed its Ooni counterparts. Food Party is also a lesser known brand, meaning you won’t be able to take advantage of a huge online community if you have questions.

Bottom Line: The Food Party pizza oven works perfectly fine but without the finesse (and likely longevity) of the Ooni Koda 12. If you can get this pizza oven on sale, go for it—otherwise pay a little extra for the Ooni Koda 12.
