Italian Pasta Salad with Mozzarella and Prosciutto
This pasta salad is super easy and perfect for any gathering, or just a cozy night in. It’s fresh, tasty, and kind of feels like summer in a bowl.

rotini pasta
or any pasta you have on hand

cup
cherry tomatoes
halved, because they look cute
1
cup
fresh mozzarella balls
bocconcini are the best

prosciutto
thinly sliced, or however you like it
1/4
cup
olive oil
extra virgin if you want to be fancy

tbsp
balsamic vinegar
adds a nice tang
1
tsp
Italian seasoning
or just throw in some oregano and basil
Salt
to taste
Pepper
to taste
Instructions
Cook the pasta according to the package instructions. Drain and rinse under cold water.
In a large bowl, combine the pasta, cherry tomatoes, mozzarella, and prosciutto.
In a small bowl, whisk together the olive oil, balsamic vinegar, Italian seasoning, salt, and pepper.
Pour the dressing over the pasta mixture and toss to coat.
Chill in the fridge for about 30 minutes before serving. Or eat right away if you can't wait.
Notes
This salad can be made ahead of time and stored in the fridge. Just give it a good stir before serving.
