Homemade Italian Ice

Ingredients
  

  • 2 cups fresh fruit or fruit juice (lemon, cherry, mango, strawberry, blueberry, or your favorite flavor)
  • 1/2 cup granulated sugar (or honey for a natural option)
  • 1 cup water
  • 1 tablespoon fresh lemon juice (for brightness)

Instructions
 

  • In a small saucepan over low heat, combine the sugar and water, stirring until the sugar is fully dissolved. Let cool completely to make a simple syrup.
  • In a blender, combine the fruit (or fruit juice), cooled simple syrup, and lemon juice. Blend until completely smooth.
  • Pour the mixture into a shallow baking dish and place in the freezer.
  • Every 30 minutes, stir the mixture with a fork or spoon to break up ice crystals and create a smooth texture.
  • Freeze for about 3-4 hours, or until the Italian ice is firm but scoopable.
  • Scoop into cups and serve immediately, or store in an airtight container in the freezer for up to 2 weeks.

Notes

For extra flavor, try mixing fruits like strawberry-lemon or mango-pineapple! To make a grown-up version, stir in a splash of vodka or rum before freezing.
