This creamy Chicken Scampi Pasta features tender chicken, linguine, and a rich garlic-butter sauce with a hint of lemon. Perfect for a cozy family dinner or a special occasion!
Cook the linguine according to package instructions. Drain and set aside, reserving 1/2 cup of pasta water.
Season the sliced chicken with salt, pepper, and red pepper flakes if using.
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Sear the chicken strips for 3-4 minutes per side until golden and cooked through. Remove and set aside.
In the same skillet, add the remaining olive oil and butter. Sauté the minced garlic for 1-2 minutes until fragrant.
Pour in the chicken broth and lemon juice, bringing the mixture to a gentle simmer. Stir in the heavy cream and Parmesan cheese, whisking until the sauce is smooth and creamy.
Return the cooked chicken to the skillet, along with the drained pasta. Toss everything together to coat in the sauce, adding reserved pasta water if needed to adjust consistency.
Garnish with fresh parsley and serve immediately.
Notes
For a lighter version, substitute half-and-half for heavy cream. This dish pairs wonderfully with a side of roasted vegetables or garlic bread.
